1. Roast ginger, caraway seeds,
coriander seeds and dried chillis in dry pan and grind to paste
2. Grind lemongrass root, peppercorns
and nutmeg to paste
3. Combine pastes and add shrimp
paste
4. Heat onion and garlic in pan
5. Cut chicken, place in pan
6. Place remaining ingredients
in pan, boil
7. Simmer and reduce
8. Serve, with rice if desired
